Richmond pop-up Fields in the Alley:
Information-ally, a pop-up restaurant just appears and disappears with, well, whim. Typically stationed in a closed restaurant or vacant food arena (with permissions, of course), it is an underground affair and marketed as such. With this hush-hush marketing comes well-informed patronage. New York, California and Illinois have seen success with these endeavors and big name chefs such as Thomas Keller, Joshua Skenes (Food and Wines best new chef 2010), and former Chez Panisse Chef Christopher Lee are among the individuals to pave the successful way.
